Ingredients:
- 150g Magenta Love potatoes
- 150g Blue Star potatoes
- 150g Bikini potatoes
- 20g Mangetout
- 15g Radish
- 15g Turnip
- 5g Capers
- 20g Baby onions
- 2g Spring onions
- Olive oil
- 1g Mint leaves
- Lemon juice
- Salt and pepper
Method:
- Heat the oven to 200°C.
- Bake the potatoes in the oven for 1 hour, or until they are golden and crispy. Set aside to cool.
- Blanch mange tout, and turnip.
- Char onions on the top grill of the oven, until semi blackened.
- Chop the radish and herbs.
- Toss all ingredients together, and some lemon juice, herbs and olive oil to taste.
- Arrange on plate to your liking.
