Warm Potato Salad

Ingredients:

  • 150g Magenta Love potatoes
  • 150g Blue Star potatoes
  • 150g Bikini potatoes
  • 20g Mangetout
  • 15g Radish
  • 15g Turnip
  • 5g Capers
  • 20g Baby onions
  • 2g Spring onions
  • Olive oil
  • 1g Mint leaves
  • Lemon juice
  • Salt and pepper

Method:

  • Heat the oven to 200°C.
  • Bake the potatoes in the oven for 1 hour, or until they are golden and crispy. Set aside to cool.
  • Blanch mange tout, and turnip.
  • Char onions on the top grill of the oven, until semi blackened.
  • Chop the radish and herbs.
  • Toss all ingredients together, and some lemon juice, herbs and olive oil to taste.
  • Arrange on plate to your liking.
